couple things you can try Gav,
resetting PS3. You might be having a setting that doesn't go well with your new tv
Make sure the system is off.
Hold down the Power Button for 5-6 seconds - until you hear the second beep.
That's it, your video settings are reset and you should be able to choose your input and configure it from there.
if yours a new TV, it should support 1080p. Do double check your model before configurating.
try Just Scan (or something like that) in the resolution-setting under the display-settings.
HDMI 1.3 cable helps
check if there is any appliances like a fan or mobile phone interfering
